Chicken Taco Crock Pot Soup

Like most people, I’m a sucker for good crock pot recipes and fall soups — combine these two things, and I’m sold.

That’s exactly what you get with this chicken taco crock pot soup.


Just throw all of these ingredients into your crock pot and 4 hours later you have a tasty and healthy soup to cozy up with.

One of the best things about this soup is that you’ll have leftovers to last you for another few meals!  It’s a win-win every way you look at it!


Chicken Taco Crock Pot Soup


2 lbs boneless skinless chicken breasts

16 oz medium salsa

1 can black beans, undrained

1 packet taco seasoning mix

2 tablespoons chili powder

8 oz water

Salt and pepper to taste



Add all ingredients into a crock pot and stir to combine

Cover and cook on high for 4-5 hours or low for 8 hours

Uncover and shred the chicken with two forks.  Turn the crock pot to warm and let sit for 5-10 minutes

Ladle the mixture out into bowls and top with your favorite taco toppings.  I like to put a little bit of nonfat Greek yogurt and crumbled tortilla scoop chips on top of mine.  You can also add shredded cheese, shredded lettuce, sour cream, etc.

The added crunch of the scoop chips makes this soup extra delicious
